Mrs. Kofoed is the best of the best! My son was in her class last year and she made every effort possible to make sure he felt loved, supported, and seen. Often he would come home with little handwritten notes from Mrs. Kofoed thanking him for helping someone in class, complimenting him on his handwriting, congratulating him on his improvement in reading, etc. It meant so much to him and to me. I know that she cares deeply for each and every one of her students. I had the opportunity to work at a fundraiser with Mrs. Kofoed and it was so fun to see all of her past students get so excited to see her and talk with her. She remembered every single one, not only their names, but their interests and hobbies. She is just absolutely amazing! She is retiring after this school year and while I am so sad that none of my other kids will have her as a teacher, I am so happy for her and her family and grandchildren. I am beyond grateful for the legacy that she has left at East Meadows and for the love and care she had for my son.
